Hummus
Trader joes makes a artichoke tapenade I love
I also make black bean dip with chips
I bread eggplant with salad dressing bake it and add a fresh tomato, balsamic and mint.

what about making veggie chips?
I was thinking about slicing some zuchini and eggplant really thin - putting some mac nut oil on it and baking till crisp
I stubbled upon this by accident last night when a few of my eggplant slices turned into chips- so good!

That is a great idea! I tried once to make Taro chips and they actually came out good. I made sweet potato and turnip. Never thought to use eggplant. Thanks!
