Weekly Menus for 3/7

Sunday--at my mom's

Monday--Beef Stroganoff over Egg Noodles

Tuesday--Grill (Chicken sausage with onions/peppers OR hamburgers, fries)

Wednesday--Leftovers from Mon & Tues

Thurs--Salad & Pizza

Friday--Going out w/DH and DD

Saturday--not sure...I might try a new recipe...maybe something from here? Chat Icon

Sat - Roasted Chicken, Mashed potatoes, String Beans, Biscuits

Sun - Sausage & Peppers, salad & fresh semolina bread

Mon - Porterhouse steaks, Baked potatoes, sauteed spinach

Tues - Chat Icon 1st Birthday!!!!! Having family over for dinner & cake

Wed - Chicken Pot Pie, Salad

Thur - something with chicken cutlets....not sure what yet!

Fri - Pasta w/ broccoli, garlic & oil

Sat: Marinated London Broil on the bbq, red mashed potatoes and corn on the cob (DH's family b-day dinner)

Sun: Leftovers from last night (we made a ton) maybe in sandwich form on garlic bread with mozzerella???

Mon: Chicken cutlet, wild mushroom cous cous and corn

Tues: late night at the office...Soup and sandwiches/grilled cheese

Wed: 10 cent wing night

Thurs: Spaghetti with meatsauce

I haven't really planned the menu for this week yet....I will come back and edit after we do the weekly shoppingChat Icon

Sunday: I think we're going out.
Monday: Chicken curry, basmati rice
Tuesday: Baked pork chops, potato pancakes, green beans, apple sauce
Wednesday: Grilled Cheese, Cream of tomato soup, chips
Thursday: Porterhouse steaks, baked potatoes, Hayley's burnt broccoli
Friday: Roasted Shrimp, Bruschetta, House Salad.
Saturday: Birthday Party.. no cooking.

Thursday: Grilled Flank steak, baked sweet potatoes, grilled asparagus

mon - balsamic chicken, couscous, burnt broccoli

tues - oven sammies with sopressata & provolone on kings Hawaiian rolls, white bean salad, garden salad

wed - lemon and basil chicken breats with greek orzo

thurs - spaghetti and mozz-stuffed meatballs, maybe garlic bread for DH & my nephew

Wednesday- steak for DH, with veggie and potato..something light for me maybe soup.

Thurs-DH has a St. Patty's day dinner w/ my dad so I will make something

Can you share your Tandoori chicken recipe? Your Ropa Vieja was soooo good!



Absolutely! It's actually MIL's recipe, and DH grew up eating this.

Tandoori Chicken

Ingredients:
8 leg/thigh chicken pieces cut in half (making 8 drumsticks and 8 thighs)
extra virgin olive oil
1 lemon (juice of)
1 1/2 tsp. chili powder
10 tsp. tandoori spice mix (Rajah brand)
4 tsp. crushed garlic
8 tsp. crushed ginger
1 cup plain yogurt


Directions:
1. Preheat oven to 375 degrees.
2. Cut fat off of chicken and place in large bowl.
3. Add one turn of olive oil, juice of one lemon, and chili powder.
4. Mix together and marinate for 20 minutes.
5. Add tandoori spice mix, crushed garlic, crushed ginger, and yogurt. Mix everything together.
6. Spray baking pan(s) with cooking spray (such as Pam).
7. Bake in oven at 375 degrees for 45 minutes. Turn chicken over and bake another 15 minutes.

Personal Notes:
1. The tandoori spice mix can be found in Indian grocery stores. There's different companies that make this spice mix, but Rajah brand tastes the best IMO. It comes in a small canister (not in a box).
2. I don't buy the garlic or ginger already crushed. I usually put a bunch of garlic cloves and small pieces of ginger in a mini-chopper with enough water to grind it into a puree or liquidy paste.
3. Full-fat plain yogurt works and tastes best, but I tend to use lowfat, plain yogurt to save calories.
4. Normally DH would bbq or grill the chicken, but it's too cold outside so this is how I make the chicken in the oven.
5. If I'm not in a rush, I marinate the chicken in the fridge for an hour before popping it in the oven.

Mon: Helene's tacos (ground beef, non authentic) with fixings (lettuce, tomato, avocado, rice, beans, cheese)

Tues: pork chops in dijon cider sauce, mashed potatoes, sauteed spinach

Wed: chicken cutlets, rice, pink beans, salad

Thurs: sausage and broccoli rabe over bowties

Fri: fish of some kind, almond and cranberry couscous, green beans
