I always like to make an antipasti platter - very easy and everything is store bought. Just arrange some italian meats, cheeses, olives, roasted red peppers, marinated mushrooms, sundried tomatoes, olives, etc. on a platter....YUM
Also a huge fan of shrimp cocktail.
No matter how fancy I try to get at my parties, all my friends and family still love the mini hotdogs best. I buy them and wrap them myself in cresent rolls.

love a good cheese platter. i usually go with a good creamy brie or saint andre, maybe smoked gouda or swiss or havarti, and a little layered tomato/mozzerella with fresh basil and garlic marinated olive oil drizzle. then usually add some apricot or strawberry jam in one of my espresso cups, oil-cured olives, and pretty cluster of grapes right in the middle. it always steals the show from all the stuff i slaved away on.
another one of my faves is asparagus spears with a dollop of goat cheese in the center then wrapped with prosciutto and baked in the oven until roasted and crispy.
sometimes i'll break out the fondue pot and fill it with this creamy tomato/roasted pepper soup i get @ costco. then i cut frozen puff pastry into small squares that I wrap around a piece of brie and bake it in the oven until it turns into sort of a french-style grilled cheese and tomato soup finger food. people are always into it.

Seven layer mexican dip, guacamole
stuffed mushrooms
olive tapanade (so easy, chop a can of green and a can of black olives, add s&p and some evoo)
make a pizza slice it into small
sqaures...you can get very creative here
antipasto--salamis and cheeses
veggies w/dip

sliders - burgers, chicken, pulled pork

fried ravioli with marinara sauce

i could keep going and now i am really hungry!
