What are some of your favorite spring/summer meals to cook?
I've been in such a meal plan rut latelY since the weather is getting warmer. I feel like I e been making the same things over and over again. Grilled chicken salad, taco salad, chicken, beef or pork kabobs and burgers. What are some of your favorite meals to make during the spring and summer?

What are some of your favorite spring/summer meals to cook?
-I love cold pasta, like ravioli or tortellini with broccoli and parmesan cheese on top. -homemade potato salad or pasta salad -grilled veggies -bruschetta -penne with pesto sauce -fresh mozzarella, tomato, with EVOO and balsamic vinegar on top. -cucumber salad -And my fav: Insalata di riso con wurstel (Italian rice salad with hot dogs)

Portobello tacos Quesadillas Salad greens with -beets, walnuts, berries and goat cheese or -snap peas, shredded carrots and wonton crispy thingies Foil packs of veggies on the grill -sliced carrots with a bit of whiskey and a small amount of butter or -tiny potatoes with olive oil and herbs or -squash and peppers with oil and spices BBQ'd tofu topped with shredded cabbage slaw and pickles

lots of grilled fish ( snapper, bronzino, or whatever is on sale )
grilled squid with grilled veggies ( eggplant, radicchio, endives, tomatos , zucchini, mushrooms)
lamb burgers stuffed with feta inside. when you bite into it its all goooey and deelish.
and of course lobsters.
all i use to season for every recipe is salt, pepper, oregano, garlic. for grilled fish i have it cleaned,butterflied at the store so all i do when i get home is rinse, pat dry- salt pepper oregano, and on the inside i put slices of lemon and fresh herbs-usually thyme) and put a ton of olive oil inside and out.

Anything on the grill (fish, sausage, burgers stuffed with blue cheese or sharp cheddar, ribs, marinated skirt steak, shrimp, kabobs, etc.) Cold pasta, tortellini, or rice salads Cucumber and cherry tomato salad Panzanella Caprese Lots of salads with nuts, berries, and blue cheese, gorgonzola, goat cheese, or feta String bean and potato salad (no mayo) Chick pea salad or three bean salad Quinoa or couscous salad Tabbouleh Grilled veg (red peppers, zucchini, eggplant, etc) on grilled/toasted pita with hummus and tzatziki Grilled corn on the cob Lobster and crab clambake Shrimp boil Lots of homemade pesto

What are some of your favorite spring/summer meals to cook?
The skinny sausage (pork, turkey, chicken, lamb whatever kind) that's shaped like a huge pinwheel, pasta with zucchini or asparagus and a tomato salad. It's our go-to meal in the summer. If I make this in the winter DH and I say "ahhhh, tastes like summer".
