Re: What are you cooking for New Years Eve?
When we do NYE we do a cocktail party- all drinks, apps and desserts. I usually buy a nice variety of frozen apps from BJ's- they have some really delicious/gourmet ones now, make a spinach dip, a hot clam dip, put out cheese/crackers/pepperoni, salsa and chips, hummus, olives etc
Nobody eats dinner but they make a dinner out of all the yummy snacks and apps!

This would be so much easier for me but my husband's family needs a meal along with the apps.

Re: What are you cooking for New Years Eve?
What about making a salad, bread, and a hot pasta dish (ziti, lasagna) to serve with snacks/apps. This way people could choose what they want to eat and how much.
Our friends used to host NYE and would purchase hero sandwiches, a few salads and have snacks out for people to eat and lots of drinks.

Yes I was going to say- how about ordering a hero/salads and/or a tray or 2 of something from a local place?

Add a spiral ham or a roast fresh ham. That is so easy to pick on.

Spiral ham is on my list also a lasagna which I can prepare the night before.
I think I might just do these 2 things and just buy app from bj's. Keep it simple and stock up on drinks.

Re: What are you cooking for New Years Eve?
We always do the never-ending appetizers and desserts and drinks...
but if they want a "real" meal... serve a big pasta dish or a chicken parm or something with salad and bread in addition.

Sure. It is like eating baked clams without the shell. SOOOO yummy!
Ingredients
1 stick margarine (can use butter) 2 chopped cloves garlic 2 cans minced clams 1 teaspoon parsley 1 teaspoon oregano 1 teaspoon grated cheese 1 cup bread crumbs 1 teaspoon lemon juice 10 drops Tabasco sauce Paprika (optional) (I don't use this) Preheat oven to 350° F. Melt margarine in frying pan and sauté garlic. Add 2 cans of clams with juice. Simmer about 3 minutes. Add dash of lemon juice and Tabasco sauce.
Mix in bowl, bread crumbs, grated cheese, oregano, and parsley. Combine the wet ingredients to the dry. Place in baking pan. Top mixture with a dash of paprika if using. Bake for 20 minutes. Serve with crackers.
