What bean recipes do you use?

I want to increase protein and fiber and I thought one way was to eat more beans. Besides baked beans, what other recipes are there?

Here are a few I like:

Cannellini Beans with Herbs and Prosciutto Recipe courtesy Giada De Laurentiis

3 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
1 (14 1/2-ounce) can diced tomatoes with juices
2 (15-ounce) cans cannellini beans, rinsed, drained
2 ounces prosciutto, coarsely chopped
Salt and freshly ground black pepper
3 cups arugula or mixed baby greens

Heat the oil in a heavy large skillet over medium heat. Add the garlic and saute until fragrant, about 30 seconds. Stir in the sage and thyme. Add the tomatoes. Increase the heat to medium-high and simmer for 2 minutes. Add the beans. Simmer until the tomatoes are tender and the juices evaporate by half, about 5 minutes. Turn off heat and stir in the prosciutto, being careful not to overcook the prosciutto. Season the beans, to taste, with salt and pepper.
Arrange the arugula or mixed baby greens over a platter. Spoon the beans over the greens and serve.

Chickpea Salad
1 can chickpeas (garbanzo beans)
2 plum tomatoes, diced
1/2 red onion, sliced thinly
salt, pepper, garlic powder
Olive Oil (a good one)
White Vinegar

Drain Chickpeas and rinse.
Add tomato and red onion
Season with salt, pepper, garlic powder
Add 1 TBS olive oil and a splash of white winegar.
Let sit for 1/2 hour
Adjust seasoning as needed
* also can use fresh squeezed lemon juice instead of vinegar if you prefer*

Asian Bean Burgers

2 cans (15 oz. ea.) red kidney beans, rinsed and drained
1/2 cup plain dry bread crumbs
1/3 cup green onions (scallions), minced
1 large egg
1 TBS lite soy sauce
1 TBS Teryiaki Sauce
1 tsp. ground ginger
1 tsp. garlic, minced
1 TB oil

To make the Burgers:
Mash beans in a medium bowl with a potato masher or fork. Stir in remaining
burger ingredients until well blended. Form into 4 patties.

Heat oil in a large nonstick skillet over medium heat. Sauté patties 3 to 4 minutes per side until heated through and crusty.

Sauce
1/4 cup low-fat mayonnaise
1 TBS prepared horseradish
1 TBS green onions (scallions), minced
1 tsp. lite soy sauce
1 tsp Teriyaki

To make the Sauce:
Mix ingredients in a small bowl. Serve the burgers on buns with lettuce,
tomato, cucumber and the Sauce.

for a snack, sometimes I will put chickpeas in the frying pan- until they are a little hard on the outside-I sometimes sprinkle a little dried hot pepper-or some parm. cheese on it-and eat them like that-so good and healthier than chips!

if you make a pasta salad, add chickpeas!

Sometimes I will mix Kidney beans, cannellini beans,chickpeas-black olives and some italian dressing

------------------

When I make a steak, the staple item we have with it, Kidney beans-with a little avacado on top!

I made my own refied beans at home tonight, easy and yummy side dish, I just opened a can of pinto beans and mashed them (don't drain) then heated a little oil in a pan with some garlic and onion and added the beans. Then I added salt, pepper, and a bunch of cumin. Cooked for a while and that's it!

I cook a bit of white onion in olive oil, add a can or 2 of black beans and the liquid they are packed in), add a little garlic powder, cumin, and chili powder. Cook through and serve over rice. Squeeze lime over it and add a little hot sauce!!
