I like this recipe for Chicken and White Bean Chili
I also like them grilled on the bbq with either sea salt and lemon or with a spicy bbq sauce.

I like to marinate them in a sticky kind of teriyaki sauce and cook them on the BBQ and serve them with sticky thai rice...I call it Sticky Chicken

i've cooked them in the crockpot with a can of black beans, a can of corn and a jar of salsa..
When its cooked, the chicken just falls apart and you can put it in a tortilla with some sour cream...
yum!~

this is easy.
coat thighs in dijon mustard and then roll in breadcrumbs- bake in 350 degree oven for about 20 minutes or so.
