What can I make with Chicken parts?
Legs, Thighs, bone-in breasts, wings?
I have a couple of things I already do but I'm looking for more stuff.

I do that already ... I need new ideas!
I also do "adobo chicken" ... when I put in a big sautee pan chicken parts, cut up potatoes, tons of vegetables .. sprinkle all with Sazon & Adobo and simmer for 1 hour to 1-1/2 hours. Yumm
BBQ sounds good too!

Re: What can I make with Chicken parts?
It is good with yellow rice....kind of like Spanish chicken and rice. There is a recipe on the back of the rice where you pretty much put everything in a pot on the stove and let it cook....but it comes out so yummy. I'll look for the recipe.
I also make a breading with unseasoned breadcrumbs, paprika and garlic powder and bake them.

Re: What can I make with Chicken parts?
I just tried this this week, in the drugstores, Walgreens, CVS, etc in the spice aisle is a chicken and meat seasoning powder, I sprinkled it on and baked it, that was yummy and served with minute rice cooked in chicken broth instead of water, and microwave a frozen veggie. Take flour and some spices and toss to coat , put on cookie sheet and bake, it makes oven fried chicken.

Re: What can I make with Chicken parts?
cacciatore....sooooo easy....
1. Cut up a green pepper and fry it in some olive oil in a large sauce pan with the lid on about 10 minutes, until the pepper gets a little limp....on a medium-low heat. 2. Add hot red pepper flakes (I love spicy so I add a lot), add regular pepper, and some salt. And stir the peppers around, let the spices get into the oil. 4. Open two cans of either diced or crushed tomatoes. (large cans, I prefer red pack). 3. Add chicken, doesn't matter what kind of chicken, on the bone, cutlets, with or without skin....lightly brown chicken on both sides. 5. Add the canned tomatoes, and bring to a boil. 6. Reduce to simmer and let it cook covered for about 20 minutes..... 7. serve over macaroni!!!!!!

Re: What can I make with Chicken parts?
If you want Baked Chicken (taste like fried),
Try this.
In a bowl, Whisk together one egg and some milk ( I use low fat)
Place chicken parts in the bowl and set aside.
Use Kellogs Corn Flakes - (eyeball it)
Crush them with your hand and add your seasoning (salt and pepper and/or garlic powder) dip the chicken in this mix and place them on a baking pan.
Bake chicken for about an hour at 350. It comes out so crunchy!!! Sometimes, if the chicken isn't golden brown, I broil it for a 1 minute or 2. I eat this when I am in the mood for fried!
ETA: Oh yeah, I take off all the skin from the chicken (except for the wings)

Re: What can I make with Chicken parts?
I always use this recipe I got from Oprah. Everyone loves it.
Ingredients: chicken parts, skin removed 1 c. plain non-fat yogurt 3 1/2 c. ice water 1 c. Italian breadcrumbs 1 c. all-purpose flour 1 T. Old Bay seasoning 1/2 t. dried thyme 1/8 t. freshly ground pepper 1 1/2 t. garlic powder 1 1/2 t. dried basil 1/2 t. dried oregano 1/2 t. creole seasoning
Preheat oven to 400°.
1)Coat baking sheet with 3 sprays of vegetable oil.
2)In a large bowl, place chicken in ice water; set aside. Place yogurt in a medium bowl and set aside. (make sure chicken and yogurt are really cold.)
3)Combine remaining ingredients in a large plastic bag. Seal bag and shake well to mix.
4)One piece at a time, roll each piece of chicken in the yogurt and place into plastic bag, shaking to thoroughly to coat chicken in crumb mixture.
5)Transfer the breaded chicken to the baking sheet and spray lightly with vegetable oil.
6)Place sheet in the middle rack of the oven and bake 1 hour, turning pieces every 20 minutes to brown evenly.
