MUSTARD-GLAZED SALMON Serves 4
3 tablespoons olive oil 1 tablespoon Dijon mustard 1 tablespoon fresh lemon juice salt and pepper 4 pieces salmon fillet (6 ounces each), with skin chopped fresh dill 1. Preheat the oven to 425°. In a small bowl, mix together the olive oil, the mustard, the lemon juice, and 1/4 teaspoon each of the salt and pepper. 2. Put the salmon, skin side down, in a baking dish, and spoon the mustard glaze over each piece of fish. Bake until the salmon is just cooked through and no longer red, 6 to 8 minutes. Sprinkle with the chopped dill, if desired, and serve.
You can probably grill the salmon too.
Enjoy!!

Re: What can you marinate or glaze fresh salmon with?
I make this one Salmon with Ginger Glaze Ingredients Marinade: ¼ c packed brown sugar 2 Tbsp Dijon mustard 1 Tbsp grated fresh or 1 tsp ground ginder 3 Tbsp terryaki sauce 1 Tbsp garlic minced 2 Tbsp Maple Syrup (I use sugar free) ¼ cup pineapple juice with chunks 1 – 1.5 pound salmon ½ tsp salt ½ tsp ground black pepper Preparation Marinade fish in first six ingredients. Coat rack or broiler pan or baking dish with cooking spray. Season both sides of fillets with salt and pepper. Place salmon in pan and brush top with marinade (reserve leftovers). Broil 6” from heat for 10 minutes or until fish is lightly browned and opaque. In small sauce pan heat thoroughly reserved marinade. Serve each fillet on top of brown rice and reserved/heated marinade and pineapple chunks.
