Rachel Rays cookbooks are fast and easy - all 30 min meals. Emerils cook book is great for when you have more prep time :) good luck!

My standbys are the Betty Crocker Bridal Edition and Rachael Ray: 365 Meals.
I love the Rachael Ray book for creative ideas. The Betty Crocker book is great for finding recipes for all the traditional meals, ex Roast Beef, Lasagna

I love the Joy of Cooking, so much useful info in there, it is my bible of cooking. Also, I really like:
I'll Take Manhattan Lidia's Italian American Kitchn Julia Child - The Way to Cook
Most of my recipes come from Bon Appetit magazine. I love it.

I have a ton of cookbooks from the Barefoot Contessa and I love them. Her stuff is surprisingly easy but so good and it looks and taste like you were in the kitchen the whole day.

Re: what is (are) your favorite cookbook(s)?
I think every Better Homes and Gardens recipe I have ever made, from the cookbook or the magazines has turned out great! I have the traditional one in the binder.
I also have a few Cooking Light cookbooks that I really like. They are lighter versions of recipes, but they don't taste lowfat - they still have a lot of flavor.
Costco has great prices on whatever cookbooks they are carrying. I have seen some of those mentioned in this thread there recently (the Rachel Ray one for sure and some of the Williams Sonoma books.)
