What is your Easter Menu?
I wasn't planning on hosting...it's usually my MIL's holiday to host. But this year things are crazy for both sides of the family and I somehow got roped into making Easter dinner for 8 of us. I have no idea what to make. I was thinking of ham, but not sure what else. Figured I'd check out everyone else's menus and decide

I might be hosting since MIL usually hosts and I don't think she can host this year. If I do host, I plan on making a Ham, Lasagna (I used the no boil noodles since its easier), salad, mashed potato and veggies.

This was my plan but with baked ziti instead of lasagna. DH says that baked ziti doesn't "go" with ham, so I still need to make some sides. I was trying to make this easy...not have 2 separate whole meals!!! 
But mashed potatoes and some veggies are probably easy enough...

What is your Easter Menu?
I would love to do pineapple and brown sugar ham, roasted string beans with hollandaise, a mushroom and leek tart, white truffled smashed red bliss potatoes, rosemary brioche rolls, herb roasted baby carrots and a bibb lettuce salad with creamy herb dressing.

What is your Easter Menu?
Apps: stuffed mushrooms, fried artichokes, rice balls and charcuterie/cheeses, or sometimes prosciutto and melon
Pasta: lasagne bolognese or pappardelle with lamb sugo
Main: roasted leg of lamb, roasted potatoes, a green veg. And veal cutlets or chicken cutlets

App: the usual finger foods, veggies chips etc
Main meal: pierogi, kielbasa, hard boiled eggs, ham and baked potato soup
Dessert: cheese cake and ice cream

My mom and I host over 30 people at my house. Big Fat Italian Easter.
Apps:
Full Antipasto- cheeses, meats, sausage, olives, etc.
Pizza Rustica (meat pie/quiche) Homemade
Prosciutto Bread homemade
Salami/provolone bread homemade
Pasta Course:
Homemade Gnocchi & Fettuccine
Meatballs, Bracciole, short ribs from the sauce
Main Course:
chicken dish with Artichokes & mushrooms
Lamb
Ham or Baby Back Ribs (haven't decided yet)
Fish - Probably Tilapia or Red Snapper
Broccoli Rabe with sundried Tomatoes

my mom hosts Easter every year.
Breakfast at 8AM:
blessed hard-boiled eggs
blessed bread
blessed sausage
deviled eggs
cold cut platter
assorted egg dishes made by my dad
dinner 3pm:
roast duck
chicken breasts stuffed with chicken livers
roasted potatoes
beets
possibly brussels sprouts or green beans
dessert:
mom's homemade cake (not sure which one yet)
whatever dessert guests bring

What is your Easter Menu?
The pizza rustica is basic
I make my own bread/pizza dough. Mix together the big container of ricotta (hang in cheesecloth or pantyhose to drain the water out, 2 hours) 5 eggs, beaten, 1 cup blended parmigiano and pecorino (grated), a small ham steak, chopped, cubed up ricotta salata, medium provolone and mozzarella and asiago (about 1 1/2 cups? maybe a cup) hot and sweet Italian sausage and sopressata and salame.
Stretch the dough out thin like a pizza. Line a springform pan with the dough, add the ricotta mixture, and top with a circle of dough, fold the edges over around the circle, brush with egg wash.
Bake at 350 for 1 1/2 hours. Let cool completely before unmolding out of the pan.

Blinis with shrimp and chorizo app
Spinach and lemon risotto stuffed pork loin
A bunny cake for dessert.
It is just from a box but so cute and have been making it for years with little cousins, my nieces and nephews and now DD
