I don't really make things from "the back of the box" from something "in this vein" is 7-layer dip.
It is all stuff that is already made (well except the guacamole I make my own) and I just assemble it so I consider it "back of the box" 
But I like to make this when we have company for football games or drinks bc it is a crowd pleaser !

It's called Cooking on the Side - you should check it out!
I made the stuffing muffins one day and they were yummy!

I loooooove the cold spinach dip on the back of the Knorr's vegetable soup mix pouch. YUM!! It is always requested at parties I attend.

I make the chicken marsala on the back of the marsala cooking wine. I thought it would suck but it's great.

OMG, I have been sitting here reading through all her posts for a half hour now! I love it!!! How did you find her blog?
edited because I forgot to answer the OP's question! I use the Lipton's Recipe Secret French Onion Soup recipe for the roasted potatoes quite regularly. I think DH would prefer I make them every day!!

I like a lot of the recipes on the back of the lipton soup boxes. The spinach dip recipe on the back of the vegetable soup box is so easy and delicious! I also make the slow cooker pot roast recipe on the golden onion box a lot!
