I make my own filling...it's very light.
Ricotta cheese, sugar and cinnamon. you just add some sugar and cinnamon to the ricotta until it tastes good. If you like it sweeter..add more. I usually add fruit on top of that..anything you like..I like bananas! just don't push the two layers together. also, it tends to evaporate after a while, so I fil it right before I serve it.

I just made one last night, I used a pint heavy cream 1/4 cup of sugar and 3 tbs of Kahlua to make a kahlua whipped cream. It was delicious!

those are great sounding fillings, but I should have mentioned it's for my DD #2 birthday.
I was thinking canoli or a chocolate filling.
