Anyone have any good chicken recipes?
I have thin sliced chicken (cutlets) in the fridge. Any good recipes out there? I'm sick of breaded chicken cutlets and i'm sure DH is too! TIA!!!!

Chicken Piccata!
Dredge your cutlets in flour, brown them in olive oil and add chopped garlic and onion. When the chicken is browned, add 1/2 cup of chicken stock; 1 cup of white wine, the juice of half a lemon and 1 tbsp. of butter. I used Country Crock. Then, add capers (rinse them first). DELICIOUS!

I have a chicken franchese recipe...grilled chicken balsamic...chicken and broccoli (oriental style), chicken in cream sauce recipe...DH eat a lot of chicken , lol let me know if you want any of them

Spinach and Feta Stuffed Chicken Breast

This Greek-inspired dish is brimming with lots of spinach, onion and feta. Pair it up with steamed rice for a complete meal. Or try it over a bed of mixed greens.
Ingredients 1 Tbsp olive oil, divided 1 small onion(s), chopped 10 oz spinach, fresh 1 tsp lemon zest 1/4 cup feta cheese, crumbled 1 tsp table salt, divided 1/2 tsp black pepper, divided 1 pound Tyson Boneless, Skinless Chicken Breast(s), four 4 oz cutlets
Instructions * In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes. * Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside. * Divide spinach mixture between cutlets. Roll up and secure with toothpicks. Sprinkle with remaining salt and pepper. * In same skillet, heat remaining oil over medium-high heat. Cook chicken, turning occasionally, until golden brown and cooked through, about 10 minutes. Remove toothpicks.

Chicken and Chips
1 can (10.75 ounces) condensed cream of chicken soup (undiluted) 1 cup (8 ounces) sour cream 2 Tbsp taco sauce 1/4 cup chopped green chilies 3 cups cubed cooked chicken 12 slices AMerican Cheese 4 cups Broken Tortilla Chips
In a bowl, combine soup, sour cream, taco sauce and chilies. In an ungreased shallow 2qt baking dish, layer half of the chicken, soup mixture, chesse and tortilla chips. Repeat layers. Bake uncovered at 350 for 25-30 minutes or until bubbly.
I found this when looking for something different. I use less sour cream cause DH isn't a huge sour cream fan.

dip them in bread crumbs, put a scoop of feta cheese on one side, then fold over the chicken and secure with a tooth pick
sprinkle with salt, pepper and melted butter
bake at 350 for 25 minutes

Chicken Rollatini Marsala
Ingredients Thin sliced chicken Italian Breadcrumbs Mozzarella or Parmigiana Cheese Marsala Wine Mushrooms (though I don't use these b/c I don't like them)
Directions Spread the breadcrumbs and cheese on one side of the chicken cutlet - roll the chicken lengthwise with the breadcrumbs and cheese on the inside. Keep the roll closed with 1 or 2 toothpicks.
Grill in a frying pan until cooked all the way through, and lightly browned, and remove the toothpicks.
Place the rollatinis in a roasting pan, and add Marsala wine (cover about 3/4 of the way up the chicken - let simmer in the oven at 350 for about 30-40 minutes.
It can be time consuming if you are making for a lot of people, but its pretty easy and looks a lot harder than it is once its done.

I made chicken stir fry last night and it was really good and very easy. I bought a bag of the frozen stir fry veggies and sauteed them with some teryaki sauce and chicken and made some brown rice with it. Very good and low in fat!

Chicken Cordon Blue Take 1 THIN cutlet (pound if needed), top with one slice ham and swiss. Fold over 1/3, brush with dijon mustard (very little) fold over other 1/3, brush with mustard. Roll in breadcrumbs. Put folded side down in lightly greased pan. Bake at 375 until done- about 30-45 mins. I still need a thermother to tell.
Its very nice and super easy.

Here's a quick hot chicken sandwich: 1 package chicken cutlets Monterey Cheese 1 Onion Italian bread, rolls (...any type of bread would be ok.)
Cut up chicken cutlets into pieces. Slice onion also into thin slices
Oil the bottom of a frying pan...
Throw in chicken adding some salt, pepper, ect.
Let chicken & onions brown
Add in grated monterey cheese.
Quick and easy..add the chicken to your bread and you have a hot open chicken & cheese sandwhich!!
