I am making dinner tonight with a Lantino flair...
Here is the menu so far
Guacamole chips and salsa Marinated skirt steak with chimchurri sauce (which is AMAZING if anyone wants the recipe) Sangria
I can't decide what else- I am thinking Rice and beans And this great marinated tomato/jalepeno salad I make...
But I am looking for something else creative....any ideas or suggestions?

Rice and beans definitely - you can do black beans or red beans - whichever you prefer.
You are cooking more along the lines of Mexican than Carribean but you might also consider fried sweet plantains.
Sounds yummy!

Rice and beans would be a great addition.
I recommend the goya red or pink beans with the RED label. They have a good flavor and all you have to do is heat them up. I was raised in a spanish home and these are the closest to mom's that you can find out there.
For dessert...flan (totally cheat and buy the mix that you can find in the jello aisle in the supermarket). If you make it with evaporated milk it tastes just like you baked it all day youself. Genuine flan only tastes good if you make it the day before, so I say go the quick route. Like I said, I was raised in a spanish home and if I wanted a quick flan, I got the mix, and made it. Tastes great!!
