Spinach-Artichoke Cheesy Tortellini..SOOOO GOOD!!

I tried this recipe tonight and it is KILLER..If you like those hot spinach and artichoke dips you can get at Friday's..you're gonna love this..

I also put some of the sauce aside and will be freezing it. It tastes great with tortilla chips.

I got this recipe straight from one of Rachael Ray's cookbooks!!

Makes 4 servings
1 10 ounce box of frozen spinach
2 TBSPS of Extra virgin olive oil
1 TBSP of butter
3 chopped garlic cloves
1 small onion, peeled and halved
2 TBSP of flour
1 cup of chicken stock
1 cup of heavy cream (I USED LIGHT CREAM INSTEAD)
1/8 TSPN of Nutmeg (you can probably skip this is you don't have it)
1 14-ounce can of artichoke hearts, drained and chopped
2 handfuls of parmigiano-reggiano
Salt and pepper to taste
1 pound cheese tortellini (I used Barilla spinach/cheese tortellini)

Bring a large pot of water to a boil to cook the pasta. Microwave the spinach on high for 6 minutes to defrost.

Heat a deep skillet over med. heat with the EVOO and butter. When the butter melts and is hot, add the garlic. Using a box grater, grate the onion directly into the skillet. Saute the onions and garlic for 5 minutes. Sprinkle the flour into the skillet and cook for 1 minute. Whisk in the stock, then the cream, and bring the sauce to a bubble. Season the sauce with nutmeg and reduce the heat to low.

Place the defrosted spinach in a clean kitchen towel and wring it dry. Seperate it as you add it to the sauce. Stir in the chopped artichokes and a couple handfuls of cheese, then season the spinach-artichoke sauce with salt and pepper.

Salt the boiling water and cook the tortellini according to package directions, about 3 to 5 minutes. Drain it well and toss w/ the spinach-artichoke sauce. Serve immediately.

I just polished off what I froze earlier in the week and dipped tortilla chips in it.. I can drink this stuff..lol

Yum, made this one last night. I added alot of red pepper, I like it spicy and put some salsa on top with the chips.
