Some people had requested this in the Rachael Ray post. Found this one online. Will post Pretzel recipe tonight.

You Won't Be Single For Long Vodka Cream Pasta Recipe courtesy Rachael Ray

This recipe will make enough for 2 couples. If you plan a romantic evening where more than two's a crowd, reserve half the sauce to freeze for another supper before the addition of basil, and only cook 1/2 to 2/3 pound of penne.


1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Crusty bread, for passing


Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

i made this tonite and have to say it was really good!!! the only thing is 2 people out of the 4 that ate it said it wasn't creamy enough. did anyone else have this problem. .5 cup of heavy cream just didn't seem to do it!!!!

I make it so much I have the recipe memorized (not that their is much to remember) but I kinda modified it. Instead of whole tomatoes I use a jar of Francesco Renaldi original Sauce to 1 can of chicken stock. That ratio seems to be good and then I only put 1/4 of pint of heavy cream. I don't like it really thick and creamy. You can definitely tell their is cream in their and it is just a little thinner. I also add peas and chicken. Actually last week I tried it with shrimp and it came out awesome. When I did it with the shrimp I added wine too. If you want to use the shrimp or chicken put it in when you put the shallots in that way it browns first then proceed with the recipe.

I made this for dinner tonight. It came out really good. But there was one thing - it didn't get thick. How do I thicken the sauce? I am not the best cook at all but it was yummy!

I used 1 cup of heavy cream - not half like the recipe calls for.


I made this over the weekend and my guests were more than happy with it. They LOVED it.

I personally think it need something else. I'm going to "play around" with it next time I cook it.

Great shell though!

(I also added chicken in with the shallots.)

ok, so I made it and Chat Icon wow was it good. I couldn't get the sauce to thicken (I'm guessing probably because I used chicken broth instead of stock), but wow, was it good!
