question for vegans/vegetarians
what is gluten??
all my packaged foods are gluten free and dh and i call it glutton free, lol.

From Wikipedia: Gluten is an amorphous ergastic protein found combined with starch in the endosperm of some cereals, notably wheat, rye, and barley. It constitutes about 80% of the proteins contained in wheat, and is composed of the proteins gliadin and glutenin. Gluten is responsible for the elasticity of kneaded dough, which allows it to be leavened, as well as the "chewiness" of baked products like bagels. It is the glutenins (specifically, high molecular weight glutenins) that are especially critical to gluten quality.
Many people have allergies to Wheat-gluten, which is why a lot of all-natural products will make a point of saying something is gluten free. Good alternatives are millet, amaranth, rice, or Quinoa based breads, cereals & pastas.

Gluten is a mixture of proteins from wheat flour. It is actually a vegan product (also commonly called seitan, which is yummy).
The reason they list many of the vegan items as gluten free is for the many folks who have gluten intolerances.

i just hope my lack of gluten, cholesterol, fat and sugar help lower my cholesterol!
i cheated on my vegetarian diet this weekend, for the first time in 3 months. for a year (since the "diet" started, i have been wondering what gluten was.
