Who knows how to make Penna Ala Vodka

I went to my friends house for dinner and she made Penna Ala Vodka and it was SOOOO simple and YUMMY too.... I was wondering if anyone had a recipe for it - I would call her but she is on vacation right now - I really want to make it tonite for DH...

2 tbs olive oil
2 cloves of garlic sliced
1/4 lb prosciutto from the deli (ask them to make it slightly thick when they slice it) chopped into chunks
2 oz. vodka
1 can whole plum tomatoes (crush them by hand)
Salt & Pepper to taste
2 cups Heavy Cream
1/2 cup grated parmesean cheese

On medium heat, Sautee garlic in olive oil. Add the prosciutto and sautee for a few minutes until slightly crispy but not burnt.

Take pan off burner and add the vodka, let it sit for 2-minutes (until the alcohol burns up).

Put back on medium-high heat, and add crushed tomatoes with the extra sauce from the can.

Season with Salt & Pepper

Add Heavy Cream

Bring to a Boil, and lower heat to a simmer.

Simmer for 1/2 hour.

When you take it off the heat, add 1/2 cup to 1 cup grated parmegean cheese (I usually use locatelli chese though) and stir.

Serve over rigatoni or penne.

Here's a recipe I use with chicken. It's bit more complicated because I use a couple of pans. I hope it works for you.


1 box of penne or rigatoni
3 boneless chicken breast, cut to size of thumb
3 tablespoon olive oil
2 tablespoon butter
1 cup flour (could use or more less depending on size of chicken pieces)
4 cloves garlic, minced
1 small onion, diced
1/ 2 can of diced tomatoes, drained and chopped
1/2 cup vodka
1/2 pint of heavy cream
1 can tomato sauce
Salt and pepper
Fresh Parmesan cheese, grated

Cook pasta according to directions on package. Drain and set aside. Cut chicken pieces and cover with flour. Shake off excess flour. Add 1 tablespoon of butter and 1 tablespoon of oil to pan to a medium skillet. Allow pan to heat up. Add chicken and cook until lightly brown. Set aside. In another, large skillet heat remaining olive oil and butter. Add onion and saute. Add garlic and cook for 30 seconds. Add vodka and cook until reduced or flame dissipates. Add cream and bring to a boil. Reduce heat so that cream simmers. Stir until mixture has reduced by half. Add tomato sauce and diced tomatoes. Season lightly with salt and pepper. Add cooked pasta and chicken. Stir until coated and heated through. Serve with grated Parmesan cheese.
