I have tons of them, since I do cater some cocktail parties here and there.
One of my favorites is Asparagus wrapped with proscuitto. Also, mini filets on water crackers with horseradish cream sauce.
Scallops wrapped in bacon, Tandoori Chicken Skewers.
I will post them when i get home.

to make anythign that seems ordinary "elegant" is to make sure its presented really nicely - nice trays, get toothpicks, mathching cocktail napkins

I have an easy one that always goes over well.
Cherry or grape tomato, basil and fresh mozerella on a toothpick. I usually dress it with olive oil and red wine vinegar or lemon. It looks nice laid out on a platter.
Make sure you make this one just before you serve b/c the basil gets darker as time goes by.

I recently had smoked salmon on tip toast with clotted creme & caviar.
Now I know that caviar is an acquired taste, but I think it could be easily substituted with another garnish, like a toasted almond slice or olive maybe...

I love dips - spinach and artichoke dip made in a big loaf of sourdough looks nice.

Mini quiches
Gouda wrapped in phyllo dough and baked served along side slices of granny smith apples
fried articokes
Asparagus wraped in phyllo dough and boursin cheese
stuffed mushroom caps- you can do crab, I usually do rouquefort cheese and breadcumbs.
sauasage-cheese balls served with a spicy BBQ sauce

Here are two that I always make and look very elegant and feel gourmet, although they are so easy to make.
Dates
- Get large dates and cut in half (length-wise)
- Use a knife to spread herbed goat cheese in the date
- Arrange all on a plate-- they look really nice and taste yummy!
Arugula Wraps
- Get lavash bread or tortillas
- Spread with goat cheese-- evenly throughout leave extra room at the ends to prevent overflow
- Place a layer of arugula over the cream cheese
- Roll tortilla or wrap a la sushi, then but into bite size pieces.

I like little things that are easy to eat standing up. Some that pop in my head now are:
mini crabcakes
coconut shrimp
breaded chicken on skewers with a dipping sauce
