You might want to try the cruisecritic chat board. It's a wealth of info, and they have a board specifically devoted to cruising with children.

Maybe casual dining is more appropriate for you. I don't have children and have never cruised with them so I don't know from experience. But I cruised recently and I know that besides the formal dining, there was the buffet and another dining room with casual sit-down dining from a menu. Those options were open for a range of hours so maybe you can eat around the baby's schedule! So with that as a backup you can pick early or late seating for the formal dining and if it doesn't work out as well as you planned you can always go for the casual seating.
