What kind of oil do you use?
When you make chicken cutlets?
I always used olive oil, and I just saw my gma use corn oil.

EVOO! despite common dogma, you can fry with it, and it tastes great!
I used to use corn oil, but it's high in omega 6's (which most americans eat way too much of), so I replaced it with canola.....

I use canola - I have this thing in my head that the EVOO competes with the flavors of the breading, etc.. Lighter oil - like Canola - doesn't seem to 'add' any flavor.
But.. I could just be nuts!

Canola or Olive Oil.
There is light olive oil that is not so heavy tasting.

I use Extra light extra virgin olive oil.
My MIL uses canola oil and I definitely taste the difference.
