DH and I just got back, we stayed at the Excellence, loved it!!!
We booked the ziplining through the hotel, but honestly, I really don't recommend much to do there besides relax.
Definitely book an all-inclusive because once you get there you will realize that you really don't WANT to leave the hotel. DR, or at least Punta Cana where we went, is not a place you want to hang out with the locals. It's a poor poor place and rumored to be very unsafe at night, and judging by the military with rifles on the road to our hotel, I believe it.
Once you get to the hotel you can book the obligatory snorkeling and all that stuff, but our hotel kept us pretty entertained all day, most likely because they KNOW we aren't leaving the resort.
Have fun though, it's not scary or anything, just not a place for anything but R&R!!!!

We toured a Cigar Factory. WE got to hand roll out own cigars. Not my thing, but DH loved it. We also rented ATV's and went out on all day tour. That was alot of fun.

we toured the cigar factory - a free tour. keep in mind this is operated by the cigar factory themselves (very clever, IMO) so they make stops at different hotels to pick up people and then you have to wait there for the van to pick you up. If you stay at Excellence like we did (which is AWESOME!!!!!!!!!!!) You will be the first one in the car and the last one out. The roads are awful but the factory was cool DH had a ball!
we didn't do any of the other trips. we just relaxed.

We took a day trip to Saona Island. So worth getting up that early!

When we went we took a horseback riding tour on the beach. It was totally amazing. I love horses but hate in the US how they just let you walk...(i used to take lessons) so it was fun i even got to gallop on the beach!
We also went to the aqua park and swam with the dolphins it was a nice day trip, but we were in the water litterally for like 2 minutes. It was something I always wanted to do though!
