What to do with rotisserie chicken?
We got a cooked one from Costco tonight & I don't feel like just having chicken w/ sides. Any ideas on ways to jazz it up? I was thinking to maybe shred it & put it in a tortilla w/ guacomole, sour cream, etc.

that's perfect..you can always use it in chicken salad (w/mayo) or a waldorf salad (grapes, raisins, mozz. cheese) or..you can cut it and mix it into pasta with sauce...or..use bbq sauce and make sandwiches...(like sloppy joes)..i know there's more, but that's what I've got off the top of my head..enjoy!

Chicken, dijon mustard, light mayo, dill red onion or scallions & celery.

I rip it up and put it in a pasta salad. Mix it with cherry tomatoes, peppers, broccoli, italian dressing and wholewheat pasta you have a healthy dinner.
