What to make with Chopped Meat??

We have peppers and Onions

Mashed Potatoes

Corn

And

Chopped Meat.

Any ideas on what to make using some of the items.....

Any stir fry ideas with the meat and the veggies?

We had meatloaf last night...and we dont want that again

do you have a can of beans? I have a beef N bean casserole from Betty Crocker that's yummy.

If you have tomato sauce you could do a version of picadillo w/ rice
Dice potatoes really small (they'll cook faster)
You brown the meat, onions, peppers. in a skillet. Season w/ black pepper, Goya sazon if you have it, maybe some crushed red pepper. Add tomato sauce and simmer till potatoes are tender.

Serve over rice. corn can be mixed in as a side dish...my stepmom always made this and we'd throw the corn on top and mix it all up.

How about Chili? Do you have a can of beans? And crushed tomatoes? Chili Powder? Cumin?

I brown the meat and onions. Add the corn, beans, crush tomatoes,chili powder, cumin, salt and pepper. Simmer for a few minutes and serve with white rice or by itself. MY DH likes to top it with Cheddar cheese.

Note: YOu can also cube up the potatoes and brown with the meat

i would do sheppards pie... brown the meat and onions, add the corn in for the last few minutes to cook up, put in a pan and top it with mashed potatoes and cheese... then bake it in the oven

i have this AWESOME recipe that freezes well too...
The ingredients may sound wierd and may be something that you wont like, but it is soo good!


you need:
chopped meat
1 can black olives (drained)
1 jar green olives (drained)
1 jar capers (drained)
2 cans tomato paste
2 green peppers (chopped)
1 onion (chopped)

saute peppers and onions-- remove from pan.

Brown meat, then drain.

Mix all ingredients together plus two cans of water (fill tomato paste cans) Mix it up welll and let it sit on the stove a bit until it is all warmed through. (i usually let it sit with a cover on it about 15-20 minutes)

Serve over rice... YUMMM
