what width bathroom light fixture should I get?
My vanity is 36" wide. The mirror is 28" wide. Do you think a 19" wide light fixture will look too small above it and I should go with a wider fixture or am I just overthinking this?

Why don't you take some paper/cardboard and make some mock-ups of the different sizes and see what you like.

IMO 19" is too small. Your mirror is approx 80% length of vanity therefore your lighting should be about 23-34" (approx 80% length of mirror).
