pot luck lunch... hm... either:
-pasta salad
-cut up small sandwiches (maybe 2 or 3 different kinds)
-chicken and rice OR rice and beans
-Desserts (even for lunch I don't think anyone would complain if you brought a cookie platter or something like that!)

we had a work one a few months ago, this is what people brought
salad
rice and beans
ethnic (fish) dish
mac n cheese
homemade cheese breads
pinwheels (tortillas wrapped around some cheese/meat)

This is what I was going to suggest. They are so easy to make and very tasty.
Or dessert always works.
