what's cookin, good lookin?
anyone cooking anything good this weekend? i am making a double recipe of crock pot pulled chicken so we have extra from the freezer. it's a martha stewart recipe for pulled buffalo chicken that was too tomato-y to be buffalo, so now i make it barbeque-y by throwing in ketchup, molasses, etc.
i also made fancy french toast for breakfast today (fancy because added cinnamon, nutmeg, cardamom, and orange zest to the usual custard of eggs, milk, and vanilla)

I'm the total opposite! We're having buffalo chicken out of the freezer so no cooking tonight. Tomorrow is leftover marinated chicken so none there either. I'm taking it easy this week since I'm cooking for DD's party next weekend.
I did just bake a cake for the DIY cake smash that we're attempting tomorrow. I did a yellow cake and am cheating with store bought pink funfetti icing.

DH grilled sausage so we had sausage with green & yellow peppers (so pretty) and onion. With a side of roasted red potatoes.
Sports tomorrow so gonna take it easy and make rigatoni with vodka sauce I have from Ceriello with garlic bread.

Just made this and it was sooooo good. The kebabs I marinated chicken I yogurt with dill before and then grilled. Then I made a quinoa salad with cucumber, avocado, feta and a little apple cider and olive oil. Made some tzatziki also :)

I've been on a tex mex kick. Made turkey chili and served over quinoa.
One of my DD likes burritos so she did whole wheat tortillas with black bean, cheese, lettuce, tomato and avocado.
Tomorrow will be chicken breast strips with peppers and onions with fajita seasoning and black beans and rice. I use tomato, avocados, salsa, cheese and sour cream on all of this!! And some tortilla chips!

So far I've got 2 chicken recipes marinating.
One is a bourbon/molasses marinade and the other is a greek lemon chicken marinade.
Next thing to marinade is a flank steak. Will do that tomorrow.
3 nights. Done.
