What's for Dinner? 02.12.09

Throw out the suggestions since I'm all out!

I'm looking for something on the light side (calorically), I'm trying to lose weight.

You can stick it in a pita with cucumber-feta-red onion salad... (toss those with dill & lemon juice)

I do this a lot...but I don't have tzitziki...and that is a MUST for me with that sandwich Chat Icon thank you though!!!!

dh has requested bbq chicken...

so

bbq chicken breasts
corn bread
salad
brocolli (for dh)

We are getting chicken wings... naked with Frank's Red Hot and Butter.

We are on Atkins so that's why it's very fatty LOL

You can make buffalo strips with your chicken breasts

all you need is some franks hot sauce, flour and cajun spice
and then fry them up!!!

serve with blue cheese! YUMMM

You can do buffalo chicken baked too (not fried) - that's what we do!

every 2 weeks we have ethnic night.

DH has pork crackling, blood sausage, chicken, rice, beans with eggs.

Josh and I usually get Greek.

so NOT low cal but i am making a sloppy joe sandwich for SO and a bbq pulled chicken sandwich for myself. cole slaw, corn and mashed potatoes as sides.

Saw this on the back of the minute rice box:

"Mexican" chicken skillet

Cook 2 chicken breasts in a skillet
add 1 diced red pepper
cook until tender

remove from heat and cover to keep warm

Cook 2 cups of rice (I used brown rice)
add 1 cup salsa (I used tomato sauce)
add 1 cup of frozen corn

When rice has absorbed all the water and is tender, combine the chicken and pepper with the rice and veggie.

It has plenty of veggies and protein. You can definately play with the ingredients to switch with what you have on hand.

What did ya wind up making Jen? :)

I made turkey tacos with allllllllll the fixings - onions, cheese, tomatoes, cilantro, lime, lettuce and scallions.
