ok...this is meat sauce. I occasionally make bolognese but I honestly have to think about that more so I do it less
usually, I will save pork chop bones (or the whole pork chop, heat up large sauce pot and throw the bones in there to brown.
in the mean time, we will assume I am doing a 3-can crushed tomato sauce
so,
6-8 gloves garlic, minced 1 whole large yellow onion, chopped
after bones brown, add a touch of olive oil, add onions and saute for 2 minutes, then add garlic. saute until soft and fragrant (NOT BROWN)
1 tbsp dried oregano, 1/2 tsp crushed red pepper flakes salt and pepper
continue to saute another minute or so, then add
1/2 cup wine (I use whatever is open as long as it's dry, red is a richer flavor, white is a brighter flavor)
cook out 2 minutes. return pork bones to the pot.
add the cans of tomatoes.
PARTIALLY cover the pot (if not, you will have art work all over your walls/stove/ceiling)
cook for as many hours as you like, stirring occassionally
in the mean time, in a frying pan, smallest touch of olive oil
2 gloves minced garlic 1/2 onion chopped
add to that about 1/2 pound ground beef and 1/2 pound ground pork.
saute until cooked through on medium high. add salt pepper, oregano, (more red pepper flakes if you like)
when sauce is nearing completion (I aim for at least 3 hours) add the meat.
then, add fresh basil (lots!) torn or chiffonade...whatever and tons of freshlyly grated parmiggiano.
adjust the seasoning. remove pork bones, then eat.
it tastes BETTER the next day!
anyhow, this is my quick and easy recipe. I am really bad with amounts, so adjust the garlic and onion from the jump if it doesn't look like enough.
