What's for dinner?
Chicken breasts in crockpot with a jar of salsa and low sodium taco seasoning. Cooked on low for 3 hours. Shredded the chicken, husband ate it with corn taco soft shells with toppings and I had it with spinach and avocado.

Tonight I baked a couple of sweet potatoes. Sautéed some garlic, ginger and jalapeño in a teaspoon of oil, added some turmeric, cayenne, garam masala, cinnamon and curry powder. Added chopped tomatoes and simmered til they got really soft. S&P. Then added a can of drained and rinsed chickpeas and half a bag of thawed frozen chopped spinach.
Topped the potatoes with the spinach-tomato-chickpea mixture. Heated up some IKEA frozen veggie balls on the side because I like to say the word "balls".

Yesterday was a grilled pork tenderloin, rice and salad. Today we wil just grab pizza after my DS soccer tryouts. Tomorrow I'm doing slow cooker chicken thighs.

Yesterday I had turkey shephard pie. I cook a few meals on my days off so I have something ready to eat. I also have ravioli lasagna and cheddar broccoli quiche to eat.

Eggplant "meat"ball hero... eggplant balls, provolone cheese, and sauce on whatever kind of hero bread I can find tonight.
