what's your best dish?
I told myself for 2015 I will try to cook more. so I am looking for some yummy recipes.

Chicken Madeira - it's a copycat Cheesecake Factory recipe and it's so good!
I made Inidvidual Beef Wellingtons for DH and I on New Year's Eve and they came out amazing. It may be my new go-to dish when I want to impress. Lol

I made Inidvidual Beef Wellingtons for DH and I on New Year's Eve and they came out amazing. It may be my new go-to dish when I want to impress. Lol

my sauce with meatballs is awesome. It cooks for hours though.
my salmon burgers are great. My husband wont eat salmon and loves them!
my easiest recipe, and it's really good, is panko chicken tenders.
My Thai basil fried rice is always a hit.
I don't like to repeat making the same thing too often, but these I have made numerous times! let me know if you want recipes/directions for any of these.

Lemon chicken Sauce with meatballs Linguine with white clam sauce is really good Also, mean baby back ribs with a simple dry rub, cooked low&slow.

I've made this chicken madeira recipe and it's SO good! I may have to try this beef wellington recipe!!

I'm not sure why I said "recipe" I really sort of make it up as I go and I don't measure anything. But here is what I basically do.
-Chicken breast or tenders cubed (I used like 1.3 pounds) -frozen jasmine rice from trader joes or day old rice (I used the frozen. I don't make rice. I used one packet of the frozen rice, could use brown too.) -2-3 cloves of garlic, crushed -red chili paste ( I used like 1/4 of a teaspoon. Adjust to preferred spiciness. I could have used more - 1/2 onion sliced thin - 1 pepper sliced thin (I used an orange bell pepper) - 1 tbsp plus a little more of oyster sauce - 1 tbsp- 1.5 tbsp reduced sodium soy sauce - 1 tsp of sugar - 1/3 cup of chopped thai basil
I started out by heating some canola oil in a big wok like skillet. I imagine you could also use vegetable oil. I then added in the chili paste and the garlic and cooked them on med-high heat. Then add the chicken cubes and cook till they are basically done. Then throw in the vegetables and cook for a couple of minutes till they are tender. I then added the rice and the liquids and the sugar. Stir it all up really well. At this point I decided to throw in some siriachi sauce. keep the heat med-high or high as you stir it. After a minute or two, throw in the basil and mix it all up for another minute. Taste and see if it needs more soy sauce.

Also, I sometimes make refried bean tacos. They are healthy and really good! here is my "recipe"
1 can refried beans (do 2 if for more than 2 people)ff or low sodium. I couldn't find one that was both. I used goya fat free refried black beans. soft tortillas -I used goya tomato 1/2 yellow onion or one small one cumin avocado reduced fat shredded cheese taco sauce heat some evoo in a pan on medium heat. then add diced onion. You could also add chopped garlic. I didn't think to. Anyway, after a few minutes I added in diced tomato. I cooked for a couple of minutes then added in the beans. Mix together. Then season with cumin. I used @ 1/2 teaspoon-teaspoon worth. Start with less and taste before adding more. mix everything together. I turned the heat down a bit and let it cook for 10-15 minutes. Stir occasionally.
Warm tortillas, or don't. Whatever. And serve with beans, slices of avocado, a little taco sauce, and shredded cheese. YUM.
Super easy and fast. This really took me only 20-25 minutes total. And you can serve it with a side dish if you'd like.

Here is what I do for salmon Burgers
1 lb filet of salmon, remove skin and chop 1/2 cup panko (adjust as needed) Italian seasoning or finely chopped fresh herbs salt pepper 1 clove garlic chopped 1 clove shallot chopped
Mix everything together really well with your hands. Form four patties. heat evoo in a non stick skillet. Once it is hot, add the burgers to the pan. Cook 3-5 minutes per side. After, leave pan on and warm/ lightly rolls face down.
Also, we made a mayo aioli: We took 1/4 cup mayo, clove of garlic chopped, and some lemon juice and a little evoo. Mix it all together.
We topped ours with sliced avocado and pickle slices.
For healthier version, use low fat mayo or no mayo.

No chili is definitely not time consuming!! Even if you make it stove too rather than crockpot! I do a 2 meat four bean recipe and add chorizo as well :)
