What's your favorite pasta dish to make?
Other than ziti, lasagna, stuffed shells, and spaghetti and meatballs what's your favorite pasta dish to make? (and recipe!)
Looking for new ideas!

gnocchi, chicken, and broccoli with tomato sauce pasta, garlic, oil, chicken, diced tomatoes, left over veggies and tomato sauce. You could add cheese to both of these but we keep kosher style in our house.

Rigatoni in Porcini Cream Sauce
1 oz Dried Porcini 2 cups boiling water 3 tbs Olive Oil 1 cup Shallots, Diced 2 sprigs fresh thyme 1/3 cup dry white wine 1 cup heavy whipping cream 1/2 cup grated cheese + more for serving. Salt & Pepper
Pour 2 cups boiling water over dried pocini's. Let sit for 30 minutes. Remove Mushrooms & chop finely. Reserve liquid for later.
Sautee Shallots in Olive Oil until translucent Add Porcini's back into the pan and sautee 1 minute. Add white wine and let alcohol burn off. Add reserved mushroom liquid. Bring to a boil. Add thyme & heavy cream. Season with Salt & Pepper Stir in 1/2 cup grated parm cheese. Simmer 10 minutes Serve over fresh pasta with some more grated cheese.

LOVE gnocchi with pesto
Bowties with fresh tomato, EVOO & lots of garlic. So simple & light
I dice up about 6-7 Roma tomatoes
Add about 4-5 turns of EVOO into a pan & heat. Squeeze about 7 cloves of garlic into it & cook until golden. You can add as many cloves you like - DH loves garlic so I usually put a minimum of 7.
Add diced tomatoes as well as salt & pepper to taste. I usually add a small can of tomato sauce (8oz), just because DH prefers a more wetter sauce. You can omit this if you prefer - taste even better IMO.
I like to let the sauce simmer for a bit so the garlic really infuses everything - about 30mins.
Than just pour everything over pasta, add lots of grated parmigiano cheese. Mix well & Enjoy!!
I've never tried this receipe for Gnocchi by Lidia Bastianich, but it sounds delish.

I love this Giada Recipe. I make it all of the time
ngredients 1/4 cup extra-virgin olive oil 1 pound sweet Italian sausage 2 red bell peppers, sliced 2 yellow onions, sliced 1 teaspoon kosher salt 1 teaspoon freshly ground black pepper 1/2 teaspoon dried oregano 1/2 cup chopped fresh basil leaves 4 garlic cloves, chopped 2 tablespoons tomato paste 1 cup Marsala wine 1 (15-ounce) can diced tomatoes 1/4 teaspoon red pepper flakes, optional
Directions Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.

Pasta with Creamy Tomato, Onion, and Bay Leaf Sauce:
Dice up an onion and cook over medium heat until soft in 1 tbs oil and 1 tbs butter. Season onion with salt, pepper, and bay leaf. Add 1 can crushed tomatoes. Add 1 cup chicken stock. Add 1/2 cup heavy cream and heat through until sauce thickens. Combine with pasta.
Penne with Creamy Sauce and Sausage:
Remove sausage from casing and cook until browned. Add onion and garlic and cook until soft. Add 1/2 cup white wine and simmer until almost all of the wine has cooked off. Add 1 can diced tomatoes. Simmer for about 15 minutes and then add heavy cream and simmer until sauce thickens.

Pasta (any kind really) with EVOO, lots of sauteed garlic and fresh grated locatelli. This is a staple in our house. I also love to make a simple bolognese. So yummy!!!I cook it at simmer for a few hrs. I also add a bay leaf or 2 while cooking and sometimes a rind of a good cheese like parm reg or locatelli. Similiar to this Giada recipe:
Ingredients 1/4 (I use a bit less) cup EVOO 1 medium onion, coarsely chopped 2 garlic cloves, peeled and coarsely chopped 1 celery stalk, coarsely chopped 1 carrot, coarsely chopped 1 pound ground beef 1 (28-ounce) can tomatoes (I use tomato sauce) 1/4 cup flat-leaf Italian parsley, chopped 8 fresh basil leaves, chopped Salt and freshly ground black pepper 1/4 cup freshly grated Pecorino Romano Directions In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

One of my favorite comfort foods in the winter is just Rigatoni with Riccotta. Cook the rigatoni and drain reserving about 1/4 -1/2 cup of the pasta water. Return the rigatoni back to the pot with the water and add ricotta and some 1/2 and 1/2 (or milk if you must ). Season with a lot of cracked pepper and a touch of salt. Heat on low just to warm a little. Sorry, no exact measurements but the consitancy is a little thicker than "soupy." Soooo...good.....and warms the belly

pasta with sausage and broccoli rabe (I like orrechiette)
blanche head of broccoli rabe in large pot of salted water for 2 minutes, remove. cook pasta in same salted water, reserving a cup of cooking liquid when draining.
in a large pan, brown sausage on both sides, turning until mostly done. remove from pan.
add a bit of olive oil and fresh garlic..either whole or diced. I used about 4 smashed cloves..saute until fragrant.
add broccoli rabe and cook until JUST done. return sausage and let cook together for a few minutes.
add to drained pasta...add a bit of water to moisten. hit if off with salt, pepper, and parmiggiano. YUM

I love to make Puttanesca but w/o anchovies.
Salt to taste3 tablespoons olive oil 3 or more cloves garlic lightly smashed and peeled I also add feta cheese rather than anchovy fillets 1 28-ounce can whole plum tomatoe sFreshly ground black pepper to taste 1/2 cup pitted black olives, preferably oil-cured 2 tablespoons capers Crushed red pepper flakes to taste 1 pound linguine or other long pasta Chopped fresh parsley, oregano, marjoram or basil leaves for garnish
Method 1. Bring pot of water to boil and salt it. Warm 2 tablespoons oil with garlic and anchovies in skillet over medium-low heat. Cook, stirring occasionally, until garlic is lightly golden. 2. Drain tomatoes and crush with fork or hands. Add to skillet, with some salt and pepper. Raise heat to medium-high and cook, stirring occasionally, until tomatoes break down and mixture becomes saucy, about 10 minutes. Stir in olives, capers and red pepper flakes, and continue to simmer. 3. Cook pasta, stirring occasionally, until it is tender but not mushy. Drain quickly and toss with sauce and remaining tablespoon of oil. Taste and adjust seasonings as necessary, garnish with herbs if you like, and serve.

Penne alla Vodka and Shrimp Scampi over Linguine.
I don't have my vodka sauce recipe on hand, but the scampi is So easy to make and tastes like you went out to a restaurant to order it!
1- Heat some EVOO in a pan. Throw the water on for your pasta and then cook the pasta once the water is ready...the shrimp cook REALLY fast! 2- Salt and pepper some flour then flour your shrimp. (I use big shrimp because I LOVE them!) 3-Cut up some garlic, start sauteeing. Once they start bubbling up, throw in the shrimp. Don't keep heat too high, the garlic will burn. (If you like heat like DH and I, add some red pepper flakes ) 4- Do not overcook shrimp! Once they start turning pink, flip them over. Give them a few minutes and then add a can of chicken broth, white wine to taste (I add 1/4-1/2 cup, depending on how many shrimp I have). Add some parsley to color the sauce. 5- Sprinkle unused flour in to thicken the sauce....make it as thick as you'd like. 6- Once sauce thickens, you're done! Toss with pasta and add some grated cheese if you'd like. : )

Dh and I love linguini with white clam sauce...we eat this @ once a week
I also make a Shrimp & Sauage pasta dish (Emeril recipe) it is Creole style..yummy..I posted the recipe on the pasta thread DH adores this dish..

Pasta with white beans and escarole
chop onion and garlic-sautee in evoo until onion is translucent. Add canned flavored tomatoes-I used ones with jalapenos because we like spicy food. add a bit of wine and bring to a simmer. rinse 1 can of cannelini beans and add those along with torn up escarole. Simmer for 5 minutes or so then throw over pasta with some Locatelli Parmigiana. Mmmm

Lately I've been making a VERY simply pasta dish with Tri Color Rotini (whole box)
Saute celery, peppers (red orange and yellow), onions, chickpeas, in EVOO (whatever veggies you want really) a few garlic cloves. Then add some veggie stock, enough to drown the veggies, keep cooking until tender...you can add a littel white wine for flavor.
I roast (bake at 425) cherry tomatoes in the oven with EVOO and a little garlic salt in a baking pan until they boil and "pop".
When everything is done cooking, mix iit all together and serve. You might need to add a little more of the veggie stock to moisten pasta.
*Last night I sauted up some baby spinach and added it into the mix along with some apple chicken sausage*
You can really play around with it. But it's SO simple and very yummy

mmm I just made an amazing pasta dish tonight. I baked 6 sausage links and then cut them into rounds. Sauteed 3 cloves of garlic, minced. Then added frozen spinach (thawed in the microwave) and a can of diced tomatoes, drained and the sausage. I added a olive oil to the pasta, salt & pepper and then the contents of the frying pan and topped it with parmesan/romano cheese.
