When buying new living room furniture...
Or any furniture really...
Do you buy the set? Like if you had to purchase ALL new living room furniture, would you get the ottoman and chair that go with the sofa as opposed to looking at other things (and you needed a chair and ottoman)?

That's what I thought. I guess I'm going to have to ask for help here sometime because I'm awful at what goes with what when it comes to furniture

This! I bought my couch and matching love seat but then we bought a leather chair for the living room. Also my TV stand is not the same color as the coffee table and end table.

I agree that it's nice to mix it up instead of buying an entire set where everything in your entire room will match.
But I think you could buy a few pieces from a set and then just add in one or two accent pieces that compliment the set but aren't part of it. I don't think you need to do everything piecemeal, unless your style is totally eclectic.
I bought my living room furniture a few years ago at Bassett, and I liked it because you could choose different pieces, but customize fabrics. So the throw pillows on our couch are the same fabric as the accent chairs. And they had an on-site designer who helped us choose pieces that "went" together although they don't match (for example, I didn't want matching end tables). So for someone who doesn't want to hunt all over, or who isn't that confident in design choices, Bassett might be a good option.

Sometimes. Our bedroom we bought as a full set. Our living room we bought the end tables and TV stand together and then the couch, lamps, etc. separately.
