I think it depends on the consitance of the BBQ sauce and what kind of meat... some give off juices on their own.. so wont need to add water then.

I dont think you would need b/c your cooking over a long period of time under low temp.. i googled just to make sure dont want to ruin your meal.. Here is what i found:
