I'm cheap, I do one mylar and a bunch of latex ones.

i like 1 mylar. i guess it depends on how big the centerpiece is. for DD's christening we had 1 mylar and either 3 or 4 mylar (can't remember exactly)

I guess we are all cheap 
Sometimes when my friend does them for me - she will put 2 mylars and 4-5 latex

I also do 1 mylar to 4 or 5 latex. If you are putting them together yourself, buy a few extra latex balloons. The pop so easily!
