White Paint - Can someone explain the difference
I'd like to go with an all white bedroom and black trim. But when I was looking for white paint, they have a gazillion shades. Is there some kind of etiquette to what kind of white paint I should use?

Nope just more of a preference on if you like your white White or more of a creamy white or a cool white.
if you are doing black trim I might go with a white white.

I'm not a fan of pure white for walls, but I would like an off-white, depending on the color added. With black trim, I would probably go with a very pale grey.

If you want to do white, regardless of who likes it.....the difference is generally in the brightness of it and the undertones. BRIGHT white, tends to look a little institutional. Then some whites have blue undertones, some are more yellow.

I would go based on the bedding you choose. if you get an off white and use with a stark white on the walls the bedding will look dirty, and the reverse is true if you use an off white on the walls anf get stark white on the bedding
I would go with BM dove white, its not stark white, but it also doesn't have much yellow in it. the other color to consider is china white. it has more of a gray undertone but is still very white.

Totally agree with Heather on this one. I love BM Dove white. We have used it in our whole house. It's not too bright, but it's white. I would pick your bedding first and then find a paint chip that works the best with the bedding. GL! And your inspiration pic is gorgous! You have to post pics once you are done with the room.
