Open a canned or 2 of stewed tomatoes, cut up an onion or two in slices, or whatever you prefer, and cut up a red or green pepper, add chicken parts on top, I added some powdered garlic and some chciken seasonings and baked it. We had it with brown rice, but it would be good with orzo too. YUM!

Oh I think it was my recipe. It is my fave dinner ever! I am soooo glad you liked it! I was so excited when i saw this post! I usually sear the chicken thighs in EVOO and then take them out and brown the onion and red peppers. I then put the chicken back in and add the stewed tomatoes and let simmer for 20-30 min. YUMMM

Thank you so much for posting this receipe. I ended up just putting the chicken right in a baking dish with the rest of the ingredients and it came out sooo good. Chat Icon
