Whoo hoo, we won the battle of veggies tonight

Not every day can this happen, but DD is beginning to avoid veggies (almost 18 months), so tonight, the option for dinner was no option...green veggies was dinner or no dinner. She fought and we let her play, but didn't give in to something else. 30 mins later, she quietly walked over to DH and has been eating some veggies...

I just made something really yummy - might be worth a try for you!

Cut a head of cauliflower into small florets. Toss with extra virgin olive oil and some salt. Roast at 400 for 30 minutes. Top with some sharp white cheddar cheese and roast for another 2 minutes so the cheese melts. SO YUMMY!! Good veggie and not as scary because it's not green Chat Icon
