Why? Crispy on the edges of cookies after baking?
Does anyone know why whenever I cook cookies in the oven, no matter how long or short I put them in for, the edges are crispy and the center is soft? I want the whole cookie to be soft.

How are you putting them on the cookie sheet? I find that if I roll them into balls (like little meatballs) they flatten and bake more evenly then when I use the small ice cream scooper looking thing.

I'd think that's about uneven temperatures. First, you're preheating until the stove is exactly the temp you want, right? Second, what temperature are you baking on and for how long? Some of the recipes I have ask for 325 degrees for a longer period of time, some 350 for shorter.
Also, is the butter cold when you add it to the mix? How big are the cookies?
I've had issues in the past with flat cookies due to hot butter so I take it out first, nuke it to melt it and then I put it in the freezer. When I finish prepping other things, I take out the butter, mix it with a spatula and check how warm it is. It's usually about room temperature. Or you could just take it out and let it come to room temp way early.
I also refrigerate the dough in between batches. I find it gives them a nicer shape. When I put them on the sheet, I use a heaping tablespoon and resist the urge to put on more.
