why did my meatballs fall apart?
I used chopped meat, onion, garlic,breadcrumbs, and EVOO (I didnt have eggs)
I fried them first, and then was going to put them into sauce, but some of them fell apart in the pan.
I didnt have a recipe, I thought I could wing it. Apparently I was wrong

Definately the eggs- they are more binding than olive oil.

I don't think it was b/c you didn't add eggs... I never make meatballs with eggs and they have never fallen apart on me.
it might have been the subsitute you used though not really sure.

I don't think it was the eggs either. I have made them before w/out eggs and it was fine.
I noticed when I fry my meatballs they become very messy. I usually bake them.

Also - I use some water in mine to make them stick together, that could be it too...

a little milk helps and cheeses too like parm cheese i usually bake mine - so they are not moving as much as when you fry them

Eggs help bind the meatball together.
You can try cooking the meatballs on a lower heat, gently cooking them may help keep them intact when frying ...
or make sure you use a substitute to replace the egg binder - tomato paste, flour, milk & extra breadcrumb, mayonaisse (which contains eggs).
Also, when rolling them, don't press them together hard, otherwise they get "tough".
And while they are frying, don't touch them alot. Let them fry then gently with a spatula turn them. Don't press down and continually fork them.

i always use slices of bread... wet but not soaked.... it is known as the "glue" in meatballs. hth
