Please give me your opinions, I need quick answers, not worried if this is moved.
Can I cut zucchini and eggplant ahead of time for tomorrow? Can I prep the asparagus ahead of time? Can I pre-cut scallions?
Trying to get as much done in advance as possible.

Eggplant will brown. I wouldnt cut that ahead of time.
Zucchini and scallions should be ok....and I think the asparagus would be ok too but I'm not 100% sure on those.

You can cut everything ahead of time except the eggplant. If you do, the eggplant will turn brown.
