YUM! Candied walnuts... with pics.

I couldn't find any candied walnuts at the supermarket over the weekend.... I'm using them in my "SoCal salad" tonight.

So, I decided to make my own! I found a recipe for really simple candied walnuts and I just made them - took under 10 minutes! And they are DELICIOUS! I made 1.5 cups and I'm about to make another few cups because I have a feeling these will be gobbled up before dinnertime!

1.5 cups walnuts
1/2 cup sugar
salt

Spread the walnuts in a single layer on a baking sheet. Toast for about 6 minutes at 350. Line another baking sheet with parchment paper (NOT WAX!) or a Silpat. Melt 1/2 cup sugar in heavy-bottomed saucepan over medium heat. BE PATIENT. The sugar will start to clump together, then it will start to melt. It will turn a nice amber color and the clumps will dissolve. At that stage, immediately add in the walnuts and toss to coat. Place coated walnuts on your lined sheet, sprinkle with salt and break them apart with a fork. DONE! :)


Okay I just took pics during the second batch in case anyone wants to see how the process works. At first I thought the clumpy sugar meant I was doing something wrong, but it worked out :)

I know this is almost a year old but I was looking for my recipe and I saw that I never posted the salad recipe. It's on our menu this week, so I figured I'd post.

Mixed greens
Sliced granny smith apple
Candied walnuts
Goat cheese (crumbled)
Dried cranberries
Halved red seedless grapes
Chicken (I'm using leftover roasted chicken, sliced)

With raspberry vinaigrette. YUM!

Those look great and they do sound easy. I'm thinking they would be great in a stir fry too. Love them at our favorite asian restaurant!

My cousin's MIL makes these all the time using almonds. She always has them on her kitchen counter.

I refuse to make them because I'm addicted to them, I can't stop eating them. They are so yummyChat Icon
