Yummy Chicken Ball Soup!
I used to make this when I was a pre-k teacher and I made it last weekend and DH requested that I make it again this weekend so I have a HUGE pot going.
It's chicken soup but a quicker version...onions, carrots celery and other veggies (last week mushrooms, this week zucchini), chicken stock, rice, and chicken balls.
I'm putting it on parenting and not recipes bc it's a cool thing to do with toddlers if you are reading the book stone soup.
instead of cooking a whole chicken all day long and then pulling the meat off of the bones I get ground chicken meat and make tiny meatballs. if you freeze them the night before you can read your child the book stone soup and have them drop them in -- telling them that the chicken balls are stones --- and then when they cook they have little meatballs!
it's a cute idea and comes out so good. if anyone wants the recipe that i use FM me but you can just make any old chicken soup and substitute regular chicken for the chicken balls.

We had it tonight and it was SOO good. Every time I make it it seems like it gets better. Dh was unsure of the chicken balls when I first made it but now he loves them because you can cut them up into tiny pieces and have a bit of it with each bite...
And the veggies cook down so soft that Emily actually eats them...
