I often take recips from this board and now that I started trying new things, I Just wanted to share a very yummy recipe I tried the other night...it came out awesome! I found the recipe in my "Everyday Italian" cookbook by Giada something from Food Network and then adjusted it a little...
Ingredients:
ziti or penne (1bag)
asparagus (1 medium sized bunch) diagonally cut into 1 inch pieces
mozz cheese (cubed or sliced)
4 ounces of prosiutto (sp?) sliced
1 jar of marinated artichoke hearts
1 package of chicken breast
2 cloves of garlic
basil, salt, and pepper
1 cup of reserved pasta water

It's so easy....
-sautee the chicken with olive oil and some garlic (season with salt and pepper)
-bring the water to a boil and start cooking the ziti...after about 5 minutes add the asparagas and cook until tender(about 3-5 minutes or so) drain and reserve 1 cup of the pasta water
-place the ziti in another sautee pan (or the same one as the chicken I guess) with olive oil and garlic and stir...add the cup of reserved pasta water
-Turn off the heat...toss in the prosiutto, mozz cheese, artichokes, and chicken and mix it together add some basil
-sprinkle some parm cheese on top and add a little more salt and pepper if needed
I also made some garlic bread t go with it. It was delicious and even tasted good on the second day when I took it to lunch! DH really liked it too! Next time I think I'm going to add some black olives as well.
