Yummy Spicy Thai Peanut Noodles

Lower Fat Versio


2 tablespoons peanut butter
1/4 cup chicken broth
1/4 cup soy sauce
2 tablespoons of thai chili sauce (buy in an asian aisle of your supermarket)
1/2 teaspoon garlic powder
1/2 box low carb linguini
chopped cilantro for garnish


cook pasta to aldente.
while pasta is cooling, combine peanut butter, chicken broth, soy sauce,, thai chili paste and garlic powder in a small skillet over med-low heat. Bring to a boil and simmer until you reach desired consistency (about 5 minutes)

pour over pasta and garnish with chopped cilantro.
eat warm or cold.

ooo I saw the Barefoot Contessa making this and I have been looking for the recipe online--

oh, one question-- can I use chicken stock instead of chicken broth .. or are they the same thing?

This sounds great. I had peanut noodles at a Japanese restaurant and I've been craving them since.

I'm definitely going to try this.
