Yummy stuffing muffins

Last night we were having grilled chicken legs but I was in the mood for stuffing also. I made stuffing muffins. Very easy & now everyone can get the crunchy piece.

Stuffing Muffins - makes 8- 10

1 package of hamburger potato rolls
1 small onion - chopped
1 stick of butter
2 eggs
splash of milk
salt & pepper

Preheat oven to 350. Grate the rolls on the large holls of a cheese grater. Sautee onion in butter untill soft. Beat eggs with a splash of milk. I add the salt & pepper to the eggs. Add eggs & onions to the bread. Stir. Using an ice cream scoop, scoop a large helping of the mixture into the muffin tin. My tin is non-stick so I didn't need to grease or use Pam. Cook for 30 - 35 minutes.

Make sure you watch them at the end. They go from done to burnt very quick.

I like my stuffing plain but I'm sure you can add you favorites to make it just like Mom's.
