Asian Bean Burgers
I made this recipe the other night and loved it
Asian Bean Burgers 2 cans (15 oz. ea.) red kidney beans, rinsed and drained 1/2 cup plain dry bread crumbs 1/3 cup green onions (scallions), minced 1 large egg 1 TBS lite soy sauce 1 TBS Teryiaki Sauce 1 tsp. ground ginger 1 tsp. garlic, minced 1 TB oil
To make the Burgers: Mash beans in a medium bowl with a potato masher or fork. Stir in remaining burger ingredients until well blended. Form into 4 patties.
Heat oil in a large nonstick skillet over medium heat. Sauté patties 3 to 4 minutes per side until heated through and crusty.
Sauce 1/4 cup low-fat mayonnaise 1 TBS prepared horseradish 1 TBS green onions (scallions), minced 1 tsp. lite soy sauce 1 tsp Teriyaki
To make the Sauce: Mix ingredients in a small bowl. Serve the burgers on buns with lettuce, tomato, cucumber and the Sauce.
As a side dish I made sugar snap peas sauteed in sesame oil and drizzled with a little Teriyaki sauce.
So delicious and so filling!

sounds good!!
Did the beans stay in a patty shape pretty good? I made black bean patties once and they didnt stay together too well.

they stayed together pretty well, but you have to treat them with kid gloves ... form them, place them in the heated oil, then leave them for a few minutes. When you turn them, try to get "underneath" them as much as possible and flip them gently ... try not to squish them or go at them from the sides of it because pieces can break off. I had a few small pieces in the pan when I was finished, but the burger didn't fall completely apart, just some small pieces off sides if I hit it accidentally.
