Re: Any Indian recipes?

I have a whole bunch. This one is yellow lentils that you can find in the aisle that sells regular lentils. They're also called yellow split peas:

8oz yellow split peas, washed and trained
2 pints of water
1/2 teaspoon tumeric
2 thin slices of ginger
1/4 - 1 teaspoon of salt
1/4 teaspoon of garam masala (you can purchase this in any Indiand or pakistani grocerey store of you can make your own)
3 tablespoons of vegtable oil
1/2 teaspoon cumin seeds
1-2 cloves chopped garlic
1/4 teaspoon of chili poweder

Combine the split peas on water and bring to a boil. Add the tumeric and ginger. Cover, torun heat to low and simer for 1 1/2 hours. Stir every 5 minutes or so during the last 30 minutes. Ad the salt and garam masala, stir to mix

Put oil in small frying plan and heat the pan, when hot add the cumin seeds. A few seconds later put in the garlic, stir fry until garlic is lighty browned. Put chilli poweder into the pan and immediately take pan off heat and poor contents including the oil into the pot w/the split peas. Stir it together and you're done.

It's good served w/either rice or Roti or Nan

Veggie Pullao (rice w/veggies)

15oz basmati rice
3 pints of water
4oz potatoes peeled
1/2 medium sized carrot, peled
1 1/2oz fresh green beans
4 tablespoons vegtable oil

1 1/4 teaspoon salt
1/2 teaspoon ground tumeric
1 teaspoon ground cumin
1/4 teaspoon cayenne peper
1/2 hot green chili (jalapeno will do)
2 tbs chopped fresh coriander (I don't like it so I leave it out)
1 tsp peeled, grated ginger
1 clove garlic peeled and mashed

put rice in a bwon and wash. Add 2 pints of water and let soak for 30 minutes. Drain and leave in collander for 20 minutes. Cut potoatoes and carrots into 1/4 inch pieces. Trim green beans and cut in 1/4 inch pieces.
Put oil in a heavy pan over medicum heat. When hot add cumin seeds for a few seconds. Then add the potatoe, carrot and green beans, stir and sautee for a minute. Turn head to medium low and add the drained rice, salt, tumeric, ground cuming, coriander, cayene, green chilli, ginger and garlic. Stir and sautee rice for 2-3 minutes. Add 1 pint water and bring to a boil. Cover very tightly, turn heat to very, very low and cook 25 minutes. Turn off heat and let pan sit, covered for another 10 minutes.

It's really just a blend of spices. If there is any Indian or Pakistani grocery stores where you live they'll have it in the section w/all the spices. I don't know where you are so I can't point you to a particular place.

I think I have a recipie somewhere for it, l'll dig it out after I finish cooking and get back to you

Re: Any Indian recipes?

Ok, here you go. I've never done it myself, I just buy it or FH picks it up. You only need a little bit for whatever you're making.

This makes about 3 tablespoons. Store the left over in a small container with a tight fitting lid

1 tablespoon cardamom seeds
1 2 inch cinammon stick
1 teaspooon black or regular cumin seeds
1 teaspoon cloves
1 teaspoon black peppercorns
1/4 teaspoon ground nutmeg

Place all ingredients into a coffer grinder or spice grinder. Grind for 30-40 seconds until everything is finely ground
