Pot Roast Recipe
Its easy to prepare. I made this on the stove top using a deep covered pot. Just make sure you have a tight lid. You can also use a pressure cooker but I believe it doesnt take as long to cook. I would of used a crock pot...but, I broke mine.
Here is the recipe:
3-3 1/2 lb Chuck Roast 2 TBsp of Olive Oil Salt, Pepper and Italian Seasoning (optional) to taste 4 GArlic Cloves peeled 1 Large Onion Sliced 3/4 Cup or Red Wine Carrots peeled and cut (optional: I sometimes use the carrots with the leaves attached for presentation) 1 Russet Potatoe peeled and cut into pieces (med sized pieces....you can use 2 potatoes) 1 cup of flour
Heat Oil on Medium High.
Sprinkle Flour all over the Roast. Sprinkle with Salt, Pepper, and Italian Seasoning.
Brown Roast on all sides. Do not lift the roast while browning on one side.
Once Roast is browned. Lift Roast and add sliced Onions to the bottom of the pot. Let the Roast sit on top of Onions. Add the Cup of wine. Throw in the Garlic cloves. Simmer to the lowest setting and cook for 3 to 3 1/2 hours.
Add the Carrots and Potatoes near the end of cooking (usually, 30 minutes before)

Mmm I love my mom's pot roast - but when I aske her how tomake, she has no idea how to explain it to me!
